Ricotta gnocchi


  • 1 kg very fresh ricotta
  • 250 g grated goat cheese
  • 1 - 2 tablespoons white flour
  • 1 - 2 tablespoons durum wheat flour
  • 4 eggs
  • 4 egg yolks
  • Salt and white pepper.

Mix all the ingredients together gently in a bowl using your hands. Let the dough rest in a cool place for about half an hour and then form it into little balls and drop into boiling salted water. Serve the gnocchi with lightly browned butter and poppy seeds on top.
