(Spinach Noodles)


  • 300 g cooked spinach, squeezed and finely chopped in a blender
  • 300 g flour
  • 120 ml sparkling mineral water or milk
  • 3 eggs
  • salt, pepper, nutmeg



  • a knob of butter
  • 2 slices roughly chopped ham
  • 1 glass white wine
  • 1 glass single cream
  • Trentino Grana cheese, salt, pepper


Make a dough with the spinach, flour, eggs, water, salt, pepper and nutmeg. Leave to rest for about half an hour, then press the dough through a spätzle strainer into boiling salted water. When the spätzle float to the top, strain and rinse with cold water. To make the sauce, melt the butter in a pan then add the diced ham and warm gently, add the white wine and reduce slightly, then add the cream, salt and pepper. Stir in the spätzle and a few spoonfuls of Trentino Grana cheese and mix well.
