The Dolzan family are custodians of the ancient art of distillation in Trentino, the historic home of grappa, a product steeped in tradition but made according to a unique and constantly evolving method.
The tour begins by retracing the history of the family, distillers for 6 generations with over 170 years’ experience. We then move on to the distillery, which may be in operation depending on the time of year, where you’ll learn all about grappa, the traditional Trentino method, and the particular "de Varda" artisan method.
The most exciting part is down in the barrel room where we will discuss ageing and refinement techniques, and in the "Cose di Casa" family museum, a unique space housing more than 1600 old implements used by the Dolzan family over the years for work on the land, and in the cellar and distillery.
Along the way guests will sample 5 grappas with a particular focus on their celebrated aromas and organoleptic properties.
